I have a soft spot for creamy pasta salad. My very first job was as a deli hand which not exactly my teenage dream, especially since Mum organised it over the counter without my consent… but I went along with it. Turns out, it became one of the best experiences I could’ve had at that age.

The deli taught me how to talk to people, how to be professional, and how to handle everything from cured meats, poultry to fresh seafood. It was busy, loud, delicious, and I thrived. Living in that world of creamy coleslaws, potato salads, and, of course, creamy pasta salad… I quickly learned to know a good one when I saw it.

Why Make It at Home?

Why pay $8 for a store-bought tub when you can make more than double the salad at just $4.50? Fresh, cheesy, creamy, and budget-friendly!

Recreating this salad at home uses fresher ingredients, clean flavours, and if you can swing it – homemade mayonnaise absolutely takes it up a notch. But don’t panic, store-bought mayo will still give you a win. It’s already a step above grabbing the premade tub and calling it a day. And bonus… it’s so much cheaper.

Making your own deli-style creamy pasta salad at home is surprisingly budget-friendly. My recipe yields roughly 2 kg of salad (enough to serve 8–10) as a side and using your own ingredients, costs around $4.50 for the whole batch. By comparison, a pre-made 800 g tub of creamy pasta from the store will set you back about $8. So not only do you get more salad for less money, but you also get fresher, tastier, and fully customisable results and the satisfaction of a homemade crowd-pleaser!

Creamy Pasta Salad

This creamy pasta salad is a homemade twist on the classic deli version – smooth, cheesy, and irresistibly comforting. Easy to make ahead, it’s ideal for BBQs, potlucks, or casual gatherings, delivering that authentic creamy goodness every time.

Ingredients
  

  • 450 g pasta of choice rotini, macaroni, or classic spirals work best
  • 1 carrot, approx. 170g TMX: cut into pieces | Conventional: shredded
  • 1 red onion, approx. 115g TMX: cut into quarters | Conventional: diced
  • 1 green capsicum, approx 115g TMX: cut into pieces | Conventional: diced
  • 2 sticks celery, approx 60g TMX: cut into pieces | Conventional: diced
  • 350 g mayonaise homemade or store bought
  • 100 g sour cream about 4 heaped tablespoons
  • 200 g cheese mix of cheddar and mozzarella, shredded
  • 80 g apple cider vinegar
  • 50 g sugar adjust to taste
  • salt and pepper to taste

Instructions
 

Thermomix Method

  • Fill the bowl with 1.5L water and boil using kettle mode.
  • Add a pinch of salt and 450g pasta of choice.
  • Cook according to packet / 100°C / Reverse / Speed 1. If using a TM7, use open lid mode.
  • Drain the pasta and rinse under cold water to stop cooking. Set aside in a large serving bowl.
  • If you're wanting to shred your own cheese, do so now Use the chop mode and search cheese for preset. Add cheese to the pasta.
  • Add carrots, red onion, capsicum and celery in the bowl and chop 3 sec / speed 5. Scrape down sides of the bowl. Repeat for 1-2 seconds if you prefer a finer chop.
  • Add mayonnaise, sour cream, apple cider vinegar, sugar, salt and pepper to the bowl. Mix 15 seconds / Reverse / Speed 3.
  • Add the chopped veg dressing to the pasta and cheese and stir until smooth and well combined. Taste test and adjust seasoning if needed.
  • Chill for at least 30 minutes to allow for flavours to meld.
  • Add a squeeze of mayonnaise just before serving.

Conventional Method

  • Bring a large pot of water to a boil,
  • Add chosen pasta and cook according to package instructions.
  • Drain and rinse under cold water to stop cooking. Set aside in large serving bowl.
  • Add shredded cheese to the bowl (ensure pasta has cooled completely).
  • Finely dice the carrots, red onion, capsicum and celery. Add to the bowl.
  • To the bowl, add the mayonnaise, sour cream, apple cider vinegar, sugar, salt and pepper.
  • Stir until smooth and well combined. Taste test and adjust seasoning if needed.
  • Chill for at least 30 minutes to allow for flavours to meld.
  • Add a squeeze of mayonnaise just before serving.

Notes

Tips for the Perfect Creamy Pasta Salad

  • Choose the right pasta shape: rotini, macaroni, or classic spirals work best — all those little curves hold onto the creamy dressing like they were born for it.
  • Cook ahead & cool completely: don’t rush this step. Warm pasta = dressing slides off. Cool pasta = silky cling perfection.
  • Stir before serving: pasta will naturally absorb some of that dreamy dressing as it rests — just give it a good fold-through to wake it up.
  • Add a squeeze of mayo just before plating: not more ingredients, not changing the flavour — just restoring peak creaminess. Like a face mist but for carbs.
  • Keep it original: no extras, no add-ins, no wild variations. Just the deli classic you know and love — refined, revived, and finally made with real ingredients.
